now is the time to begin planting this multi-purpose herb
The flavor of cilantro my stir up thoughts of fresh pico de gallo with a summer meal, but the secret to success with this popular herb is to plant it at the right time of year and, in our area, that time is now. Cilantro leaves are an essential ingredient in many cuisines including Chinese, Indian, Southeast Asian, and of course, our favorite, Mexican. Plant in a sunny, well-drained spot and use the fresh leaves throughout the cool season in salads, salsas, and cooked dishes. When cilantro "bolts" (flowers and goes to seed) in the warm days of late spring use the seeds, called coriander, crused or whole in bean dishes, stews, or baked goods. Once you get cooking, you may find that you need several plants to keep up with your needs. Here's a recipe to inspire you and get you started!
